Lemongrass Glass
Noodle Salad
This salad is a well
known favourite at the Hungry Planet restaurant in Perth, Ontario. It's
clean citrus flavours and crisp textures make it a fabulous hot weather
dish.
(serves four)

large shrimp, peeled and deveined |

noodle threads |
| ½
c |
each
julienned carrot, celery, red and yellow pepper |
| 1

julienned
cucumber |
| 1
tbsp |
finely
sliced shallots |
| 1-2
tbsp |
finely
sliced and ground lemongrass |
| 1-2
tbsp |
chopped
green onion |
| 2
tbsp |
finely
sliced fresh mint leaves |
| 3
tbsp |
coarsely
chopped cilantro |

Dressing
| 10
tbsp |
fish
sauce |
|
chopped
chilies to taste |
| 5
tbsp |
sugar
or to taste |

lime
juice |
| 2

minced
garlic |
 |
- Poach
shrimp in simmering water until cooked, approx. 2-3 minutes.
- Drain,
cool and refrigerate until needed.
- Submerge
noodles in boiling water and cook 1 minute or until soft
and clear.
- Drain
and cool.
- Combine
dressing ingredients and set aside.
- When
noodles are dry (approx. 20 minutes), toss with dressing.
- Combine
noodles with shrimp, dressing and remaining ingredients.
